Wine and Dine
Chocolate Mousse Veg Serves 4 - 100g/3½oz top quality dark chocolate (around 70% cocoa solids)
- 300g/10½oz firm silken tofu
- 110g/4oz icing sugar, sieved
- 2 tsp vanilla essence
- 1 tbsp brandy
- Melt chocolate in a bowl suspended over a pan of barely simmering water.
- Drain and blot tofu with kitchen roll, then place it and remaining ingredients in a food processor and whiz until smooth.
- Pour in melted chocolate, with the machine running, to incorporate.
- Transfer to a serving bowl or individual dishes and chill thoroughly.
- Serve with fresh strawberries or raspberries.
