Wine and Dine

Chocolate Mousse Veg
Serves 4

  • 100g/3½oz top quality dark chocolate (around 70% cocoa solids)
  • 300g/10½oz firm silken tofu
  • 110g/4oz icing sugar, sieved
  • 2 tsp vanilla essence
  • 1 tbsp brandy
  1. Melt chocolate in a bowl suspended over a pan of barely simmering water.
  2. Drain and blot tofu with kitchen roll, then place it and remaining ingredients in a food processor and whiz until smooth.
  3. Pour in melted chocolate, with the machine running, to incorporate.
  4. Transfer to a serving bowl or individual dishes and chill thoroughly.
  5. Serve with fresh strawberries or raspberries.
