Salad Dressings

Italian Tomato Basil Dressing
Makes about 1 cup

  • 6 sun-dried tomatoes (from a packet, not in a jar with oil)
  • 1 tomato, coarsely chopped
  • 1 garlic clove, crushed
  • ¼ cup water
  • 2 tbsp balsamic vinegar
  • ¼ tsp salt, or to taste
  1. Cover sun-dried tomatoes with boiling water in a heat-proof bowl and set aside.
  2. Combine fresh tomato, garlic, basil, water, vinegar & salt in a blender or food processor.
  3. When sun-dried tomatoes have softened, drain and add them to other ingredients and purée mixture until smooth.
  4. Will keep in a screw-top jar in fridge for about a week.

Creamy Ginger Miso Dressing
Makes ¾ cup

This is delicious with a salad to accompany Chinese, Japanese or Thai style food – try it with lightly steamed mange tout & baby sweetcorn, raw thinly sliced red pepper and slivers of carrot.

  • 4 oz silken tofu (smooth and silky, as it suggests! Available in good supermarkets and health food shops)
  • 2 tbsp light miso
  • 1 tbsp rice vinegar or ½ tbsp cider vinegar
  • 1 tbsp spring onions, chopped
  • 2 tsp ginger root, grated
  • ¹/3 cup orange juice
  • 1 tsp soy sauce
  • 1 tsp brown sugar
  • 1 tsp sesame oil
  1. Combine all ingredients in a blender or food processor and purée until smooth.
  2. Will keep in a screw-top jar in fridge for about a week.
